The world's first barrel rested gin based liquor has had a long but rewarding birth:
First we developed an especially spicy gin, and then we infused it with both wild black cherries and sweet cherries and let it rest for months on premier grand cru sauternes barrels. Before bottling we amplified the sweetness from the berries with honey.
The result is a complex experience offering fresh notes from the cherry meat, almond notes from the kernels, spicy juniper notes from the gin and sweet subtle barrel notes.
We think it is perfect for enjoying neat or as a cheese and dessert companion.
